I know there's an Outlook connector for Google Apps, if that's the sticking
point.  I've never used it under the extreme conditions you've described
though so I don't know how it would hold up.  Also working for a law firm
there may be potential (or perceived) privacy and confidentiality issues
with storing email off-site.
